Process

Proximus is made with agaves that are cooked with water steam only at 100 degrees Celsius at 1 kilogram of pressure. Once the starches from the agave are converted into sugars the cooked agaves are pressed to extract its sweet juices. Each batch of Proximus is fermented using natural yeast from the citrus trees surrounding the fermentation tanks. After the fermentation follows the distillation, which is the artistic part of making tequila. The distillation is done in all-stainless steel alambiques where the heads & the tails are cut and the heart carefully separated. At this point we take the 100% agave tequila and rest it in stainless-steel to let good alcohols bond and soften the edges. The finished product is an all-natural Silver tequila with nothing added to it, just pure agave spirit.
